When you enter Honest Kitchen in Knocknacarra an eclectic mix of the world greets you. A New York style kitchen looks out into a relaxed rustic, yet modern cafe. Local products from, food to toys, line the shelves. Behind the counter Rebecca happily guides you through that day's range of "free from" food. Each delicious looking item carefully created to allow those with allergies, or just on a healthy diet, to indulge in delicious foods without any side effects or guilt!
Rebecca graduated from Dublin City University in 2010, with a degree in Communication Studies. She worked in media, the events industry and then focused on Marketing. Throughout her time in Dublin however she had worked part time in many eateries and one in particular had an impact on her. While working in Cornucopia, a vegetarian restaurant, Rebecca developed an interest in free from food. Her sister, Sarah, has also been influential in her journey on healthy eating and has helped her develop her ideas for the business.
With a fiancé from Galway a move here was appealing, especially once she spotted an opportunity to set up and run her own business. A take away delicatessen and coffee shop seemed to be a good place to start considering it is her first business. Rebecca hired a chef, with whom she helps plan and execute the menus.
